Harris Early Parsnip Seeds Parsnips are a member of the carrot family and they grow very similar. These parsnip seeds produce a parsnip that's white and tender with no hollow crown. Grows 3˝” in diameter and 12” long. A very valuable vegetable to grow not only because of the flavor but also because of the parsnips storage capability. This parsnip is also one of the easiest to harvest because it has very few side shoots.
Parsnip is considered a winter vegetable
because its flavor isn’t fully reached until exposed to near-freezing
temperatures for 2-3 weeks. This allows the starch in the parsnip to
change into sugars. Early fall plantings can be left in the ground
through the winter to be used in the spring as freezing will not harm
this parsnip.
Sow parsnip seeds in the early spring when the
ground can be worked. Sow ˝ inch deep and ˝ inch apart. Keep moist until
after germination. Thin to 3” when parsnip seedlings are 3” tall.
Parsnips require loose sandy soil in a well-drained area in the garden,
water only in times during dry and hot spells.
Parsnip does not fair well in the mid summer
climate so plant seeds in early spring and late fall. Late fall
plantings often produce the best parsnip crops.

Great Parsnip Recipe Roasted Parsnip Fries
Preheat oven to 350°.
Toss sliced parsnips with oil, herb, salt & pepper. Roast on top oven rack
for 25 minutes or until golden brown. |
