Endive have large curled green leaves and a sharp kind of flavor. Grown as salad greens or served cooked with sauce or grated cheese. Endive heads can reach 15" across. Sow Endive seeds as soon as the soil can be worked as seedlings are frost tolerant. Sow seeds ¼" deep and 1" apart. Endive seeds germination is 7-14 days. Thin to 12" apart when endive plants are 2-3" tall. Plant Endive seeds every 2 weeks to extend harvest. Stop planting once the weather starts getting too warm. Resume planting once weather cools in late summer. To blanch center leaves, tie outer leaves together 2 to 3 weeks before harvest. Each packet contains 1/2 teaspoon Endive Seeds.
