Black Beauty Eggplant grows large 3 lb oval fruits that are high quality glossy dark purple. Black Beauty Eggplant produces 8 to 12 fruits per plant and best harvested when fruits are smaller.

Black Beauty eggplant has a creamy yellow flesh and a tender mild flavor that holds together quite well when cooked. A classic summer dish served with tomatoes, peppers, onions and zucchini. Black Beauty Eggplant is also very good battered and fried.

Eggplants need to be stated from transplants. Black Beauty eggplant germination is 10-14 days.

Sow eggplant seeds 2-3 weeks after all danger of frost has passed 18-24" apart. Keep soil moist but never soggy. Mulching eggplants helps retain moisture and keep the soil at an even temperature.

Packet contains ⅛^th teaspoon approximately 120 Black Beauty Eggplant seeds.

Eggplant and Tomato Soup
serves 6

3 tablespoons olive oil
1 clove garlic, minced
1 large diced sweet onion
1 pound unpeeled eggplant, cut into 1" cubes
2 large ripe tomatoes, skinned and cut into 1" cubes
2 tablespoons tomato paste
1 teaspoon dried oregano
1 cup tomato juice
4 cups chicken stock
ź cup chopped fresh parsley
Salt and pepper

Heat oil in a saucepan over medium heat, cook the garlic and onion until soft, about 3 minutes. Add eggplant and tomato, cook for 5 minutes. Stir in tomato paste, oregano, parsley, tomato juice and chicken stock, bring to boil then lower heat and simmer for 15 minutes. Season with salt and pepper to taste.
