Arugula flowers can be used in salads as an edible garnish. Arugula seed pods are also edible and quite tasty when picked young. Arugula has a nutty flavor when harvested young and a rich peppery taste when more mature. Arugula can be used in salads, cooked as a vegetable with pasta and it also adds great flavor to meat. In Italy Arugula is used as a pizza topping added immediately after the cooking to prevent wilting. 1 cup serving of Arugula is only 4 calories. Sow Arugula seeds ¼" deep in early spring as soon as the ground can be worked. Arugula seed germination is 5 - 7 days, thin to 3" when arugula seedlings are 2" tall, (you can eat the thinned arugula) Plant Arugula seeds every 2 weeks to extend your harvest. Stop planting when the weather gets too warm then resume once the weather starts to cool in late summer early fall. To harvest Arugula simply pick the young leaves as the plant will continue to grow new leaves for months. Leave the older leaves as they are tougher and not good eating. The older Arugula leaves will also help your Arugula plant's collect energy by gathering more sunlight. Packet contains ¼ teaspoon, approximately 600 Arugula seeds. |
